Did anyone watch “Ghosts of Girlfriends Past” when it came out a couple weeks ago? Did any “real” men watch it (and not watch it because your girlfriend made you)?
I ain’t ashamed to say that I wanted to watch this movie and actually went to see it. It was corny, predictable, and thoroughly entertaining. My friend Zach questioned where my nuts were gonna be when I went to go see this movie. After I watched it, I told Zach I wanted him to give me my nuts back. I don’t know why I got so much grief from him and others about wanting to see a chick flick.
On top of that, I actually had a girl question my manhood because I bake… WTF? I’m not gonna go as far as saying that I’m a renaissance man but I bake and cook and dabble in photography and enjoy a good (and bad) romantic comedy every once in a while. So what if I share this info with everyone on this site… it’s my site and if you think I’m any less of a real man for doing all these things, then don’t read it.
Maybe I need to be that asshole that every insecure girl tends to fall in love with. Maybe not beat them but definitely shake the hell outta them every once in a while to show them that I’m a real man. You know, degrade them and let them know they ain’t nothing without me instead of treat them like the princesses that I think they are. Maybe then I’ll get some love?
You know what’s weird? I got more love from girls when they didn’t know that I cooked and baked and was artsy fartsy. When I walked around with all the piercings in my face and 30lbs of muscle heavier, they all thought I was this badass and gave me mad love. But since I’ve been expressing myself through this site, I’ve somehow become “gay” because of all the things I do. Sorry girls for killing your notion of who you thought I was… ps. you’re so vain, you probably think this post is about you.
What’s funny is that ever since I’ve been posting my baking exploits, other dudes have been coming out the woodwork proclaiming their baking accomplishments as well. Whether they started baking cause of me or came out of the baking closet because of me, I welcome it. Go and get yo bake on!


Coconut Shortbread Cookies
Original recipe from Epicurious
- 1 cup unsweetened shredded coconut (about 3 ounces)
- 1 1/2 cups (3 sticks) unsalted butter, room temperature
- 1 cup plus 1t sugar
- 1 1/4 t coarse kosher salt
- 1 t vanilla extract
- 2 2/3 cups all purpose flour
Using an electric mixer, beat butter and sugar in a large bowl until well blended. Mix in salt and vanilla. Beat in flour in 2 additions. Stir in toasted coconut. Gather dough together; divide in half. Flatten each half into disk; wrap each in plastic and chill at least 1 hour. (Can be prepared 2 days ahead. Keep chilled. Soften slightly at room temperature before rolling out.)
Preheat oven to 325°F. Line 2 rimmed baking sheets with parchment paper. Roll out 1 dough disk on lightly floured work surface to scant 1/4-inch thickness. Using 1 3/4- to 2-inch-diameter cookie cutters, cut dough into rounds. Transfer cookies to prepared baking sheets, spacing 1 inch apart. Gather dough scraps and reroll; cut out additional cookies. Repeat procedure with remaining dough disk until all of dough is used.
Bake cookies until light golden, about 20 minutes. Cool on baking sheets 10 minutes. Transfer cookies to racks and cool completely. (Can be made ahead. Store airtight at room temperature up to 1 week.)
The original recipe calls for the coconut to be toasted but I skipped this step. I also used sweetened coconut cause again, I’m a fatty. I found that rolling out the dough to a 1/4-inch thickness yields some very thin cookies. The next time I bake these, I’m gonna roll the dough out to a 1/2-inch thickness and see if it yields a thicker cookie. If you don’t have coarse kosher salt… GO BUY IT! It makes all the difference in this cookie.
While baking, these cookies made my entire place smell like I was at a Miss Hawaiian Tropic pageant. I wasn’t a fan of them when they first cooled off but the next day and the day after, these became one of my most favoritest cookies I’ve ever baked. They’re great to nibble on or to use as a topping for ice cream as they have a really good crunch to them. And I say nibble on instead of devour because all that’s in this cookie is basically butter and sugar!
